green peas, salmon and pistachio pesto

A low glycemic pasta, an excellent alternative to take legumes even if we don’t like them or we are not able to digest their classic fame. Combined with salmon, fish rich in omega 3, vitamins and minerals. To make it creamier a pistachio pesto, good for the heart, rich in antioxidant properties and it also seems that it has anticancer properties.

 

Ingredients:
240 gr of legumes pasta
180 gr of salmon fillet
100 gr of shelled pistachios
2 tablespoons grated Parmesan cheese
Basil leaves to taste
Extra virgin olive oil
Salt, Pepper to taste

 

1. Prepare the pistachio pesto with the help of a mixer combining pistachios, parmesan basil and extra virgin olive oil.
2. Cut the salmon into cubes and brown it in a pan with the addition of a drizzle of extra virgin olive oil.
3. Boil the pasta in slightly salted boiling water.
4. Season the pasta with the pesto and add the salmon.
5. Serve it warm.
